Did you say pumpkinspice? Oh, I just love them!
Then something amazinghappened. I found out that Pumpkin SpiceKisses existed. Apparently they’veexisted for a year or two and I just didn’t know it. But I do now. Oh, yes, I do now.
So, obviously these kisses neededto be made into some sort of cookie. Andbeing a pumpkin spice kiss, it was clearly screaming to be made into a lattecookie.
In the end, these cookies are warm and spicy with an amazing undertone of coffee flavor. The cookie itself isn’t overly sweet, so it pairs amazingly well with the sweet spiciness of the candy.

Pumpkin Spice Latte Cookies
½ cup unsalted butter,softened
Preheat the oven to 375degrees F and line several baking sheets with parchment paper.
In stand mixer, cream togetherthe butter and brown sugar on medium speed. Scrape down the sides of the bowl and add the egg, beat until combined.
Add in the honey, vanilla,espresso powder and spices. Mix on lowuntil combined. On low speed, mix in thesalt, baking powder and flour until well combined. Batter will be quite thick.
Scoop heaping tablespoons fullof batter and roll them into 1-inch balls. Place the granulated sugar on a plate or shallow bowl. Roll each dough ball through the sugar untilcoated and place on the prepared baking sheets.
Bake the cookies in thepreheated oven for 8-10 minutes or until the bottoms are browned and the topsbegin to crack. Immediately afterremoving from the oven, press a pumpkin spice kiss into the center of eachcookie and cool completely.
Store in an airtight containerfor a week or so.
Makes about 38 cookies
