Today I got a Secret Recipe Club S.O.S.
At today’s SRC reveal, Avanika’sblog, Yumsilicious Bakes was orphaned. Getting orphaned on reveal day is like being the last one picked to playkick ball at recess. It’s a majorbummer. So I was more than happy to stepup and make something from her blog, especially since she has so many amazing recipes!
Yumsilicious is a dessert blogand oh do those desserts look good! HadI not already made my Thanksgiving desserts, I definitely would have takenadvantage of one of Avanika’s amazing dessert recipes!
As it was, I happened upon adelicious recipe for Apple Cheddar Bread that I get to share with you today,though I made it into muffins, cuz that’s how I roll!
Typically I make chocolatymuffins (since my boys are totally chocolate freaks), but the flavors in thismuffin were speaking to me so I kept it as is. And I am so glad I did! Whetherof not you are a cheddar and apple fan, you will love the muffins! The cheddar is not at all prominent andinstead adds an amazing depth of flavor and melds harmoniously with the appleand spice flavors. These muffins will belovely for Thanksgiving breakfast…if there are any left, that is!
Apple Cheddar Muffins
¼ cup butter, softened
Preheat oven to 350 degrees Fand line a muffin tin with liners.
In a large bowl, creamtogether the sugar and butter until smooth and light. Beat in the egg and milk until completelyincorporated.
Add in the flours, bakingpowder & soda, salt, cinnamon, and nutmeg and stir until just combined; thebatter will be quite thick.
Fold in the apples, cheese,and walnuts. Divide the batter into theprepared muffin tin, filling each cup nearly full.
Bake in the preheated oven for18-22 minutes or until the tops are browned and a toothpick inserted into thecenter of the muffins comes out clean. Serve warm.
Makes 9 muffins
