Mashed Yellow Split Peas

My regular blog readers might be waiting for post presenting on traditional various food. Sorry to tell you, the real various food is fish, meat, and vegetable so there aren’t too many interesting recipe to tell.
Mashed Yellow Split Peas can be a side recipe for many main recipes like lamp chop, deep fried fish, and kidney pies. Mashed yellow split peas could be the only green food on your plate and I always choose this than those hearty deep fried potato. However, mashed yellow split peas are not everyone’s favorite. But I prefer this recipe.
Although the central is very busy most days and nights, they are quite helpful and have great outside seating to people watch as you wait for your meal. The beer is icy cold and fish with mashed yellow split peas is outstanding! Mashed yellow split peas seem to be all the rage lately, but I have prepared a vegetarian recipe with a pea mash years ago, already!
This recipe can be prepared in about 20 minutes and serves four people. The mashed yellow split peas are also good as a dip with toasted pita bread or crackers—a great way to sneak in vegetarians.

Amount per serving: Calories—155, Calories from fat—76, Total fat—8g, Saturated fat—3g, Cholesterol—10mg, Sodium—760mg, Carbohydrate—16g, Dietary fiber—5g, Sugar—7g, Protein—4g, Vitamin A—40%, Vitamin C—29%, Calcium—5%, Iron—14%, Potassium—1%.
Ingredients
1 1/2 cups yellow split peas1 teaspoon salt1 medium onion, chopped2-3 tablespoons jalapenos, minced1 teaspoon fresh turmeric, grated1/2 -1 teaspoon curry powder2 tablespoons peanut oil or 2 tablespoons ghee1 1/2 teaspoons black mustard seeds1 lemon juiceFresh cilantro (to garnish)
How to make Mashed Yellow Split Peas
In big pan boil the split peas in plenty of water for about 20 minutes until tender. If the water starts evaporating too quickly, add more as needed. By the end of the cooking time, the split peas should have the dry consistency of mashed potatoes, the majority of the lentils will have lost their shape and most of the water will have vanished.
Remove pan from range, drain the water from the lentils and stir in salt. Cover and set aside. Chop onion, and combine with the jalapeno, turmeric and curry powder.
Heat the oil or ghee over medium heat in a heavy sauté pan with lid. When oil is hot, carefully add the black mustard seeds. Stand back as they may pop up into your face. Cover the pan with the lid and continue cooking the mustard seeds until the exploding quiets down.
Now add the onion mixture to the pan and sauté until the onion is translucent and golden. Finally, stir in the cooked split peas. Remove from heat and stir in the lemon juice. Taste and adjust seasoning if necessary.
Garnish each serving with minced cilantro leaves. Serve with basmati rice.

It’s Secret Recipe Club revealday!!  This month, I had the pleasure ofwhipping up something delicious from Julie’s blog, Little Bit of Everything.  Julie is a 50-something Midwesterner(Midwesterners UNITE!!)  She started upher blog as a way of organizing her many recipes from cookbooks, clippings, andrecipe groups.

This month, I had quite a timedeciding what to make.  Actually no,scratch that.  I knew exactly what Iwanted to make.  I wanted to make the überdelicious sounding Molasses Coffee Marinated Pork Chops.  Don’t they sound heavenly?  I had all of the ingredients in my pantry andhad bought fresh chops that were chillin’ in the fridge when my plans came to ascreeching halt.
I got my bottom braces on.  Whoa Nelly.  It was soup and soft foods for this girly, soyummy pork chops got the boot (and my chops went in the freezer for anotherday).
Lucky for me, Julie’s blog istrue to its name and there is a little bit of everything to be found, includinga nice, soft, baked oatmeal.  And sincethe weather has turned a bit cool (well, when it wants to), and fall-like, theyummy fall pumpkin and spice flavors were a welcome treat to my sore mouth.
What’s that you say, I’musually hating on oatmeal?  So very rightyou are.  But I have discovered baked oatmeal and guess what????  That mushy gaggy oatmeal texture Idespise?  It completely disappears inthis baked version!  Yay!  This breakfast kept me full and satisfied allmorning for under 350 calories.  And that’sa winner in my book!

Recipe Notes*I used 1 tablespoon of honey when I made this and I thoughtit was perfect!  My husband, on the otherhand, felt it was too bland and added sugar to his, so add more or less honey tosuit your tastes.

Baked Pumpkin Spice Oatmeal {for two}Adapted from Little Bit of Everything
¾ cup plus 2 tbsp oldfashioned oats¾ tsp baking powder½ tsp ground cinnamon¼ tsp ground ginger¼ tsp ground clovesDash of salt (about 1/8 tsp)¾ cup lowfat milk½ cup pumpkin puree1 large egg1-2 tbsp honey, to taste1 tbsp unsalted butter, melted3 tbsp dark chocolate chips,divided1 tbsp chopped walnuts


Preheat the oven to 350degrees F.  Spray two 1-cup ramekins withcooking spray and place them on a baking sheet.
In a large bowl, combine theoats, spices, salt, and baking powder.
In a smaller bowl (or largemeasuring cup), whisk together the milk, pumpkin, egg, honey, and butter.
Pour the wet ingredients intothe dry ingredients and stir until combined. The mixture will be quite runny. Fold in 2 tablespoons of the chocolate chips.
Divide the batter evenlybetween the two prepared ramekins and sprinkle with the walnuts.  Bake in the preheated oven for 28-32 minutesor until the tops are browned and no longer sticky and the oats have set.  Sprinkle the remaining tablespoon ofchocolate chips over the top as the ramekins come out of the oven.
Serves 2

Cooking Chickpeas in the Crockpot

Let’s start with this:  I never in a million zillion years thoughtthat I would ever cook beans (other than for Ham & Bean Soup) for thepurpose of simply having them on stock. Nope I was a big time canned bean kind of girl.
But I was recently intriguedby the implied ease and cost saving of making my own.
I decided to start off withchickpeas, because I LOVE chickpeas!  
It was super easy to make thechickpeas in the crockpot.  Just throwthem in & forget about them for 3 hours. And it’s not much work to deal with them once they’re done cooking,either.
But here’s what trulyastounded me.  The flavor and thesize!  I mean look that the sizedifference between canned and home cooked chickpeas!  Amazing! 

In a side by side comparison,the homemade ones were also much more flavorful and I love that you can controlthe saltiness as well.

Recipe Notes:*One can of chickpeas yields approximately 1 ½ cups ofchickpeas.
Cooking Chickpeas in the CrockpotMethod from The Healthy Eating Site
1 lb (16 oz) dry chickpeas(about 2 cups)6 ¾ cups water1 tsp sea salt


Rinse and drain the drychickpeas in cold water.  Keep an eye outfor any stones and dark brown funky looking chickpeas; discard those ones.
Place the rinsed chickpeasinto a crockpot (I used a 4.5 quart crockpot, though a slightly smaller onewould probably do).  Add the water andsalt and give them a little stir.  Thencook on HIGH for 2 hours (for very firm chickpeas) or 3 hours (for softer “morelike the can” chickpeas).
When done to your liking,carefully drain the chickpeas into a colander. Be sure to wear oven mitts and watch out for steam!  Rinse the chickpeas with cold water and letthem drain for about 15 minutes.
Place the cooked chickpeas inan airtight container.  Cooked chickpeaswill keep for 2-3 days in the refrigerator. Alternately, place 1-2 cups of chickpeas into freezer bags and freezethe chickpeas to keep them longer.

Quinoa with Black Beans

Earlier this week, I mentionedthat I was doing a recipe swap with the ladies over at SkinnyMs.com.  My Slow Cooker Shredded Beef was posted ontheir site and now I have the pleasure of whipping up Quinoa with Black Beanshere!
This was actually my firsttime ever using quinoa!  In this recipe,the quinoa was nutritious and delicious when paired up with the spicy blackbeans and tomatoes.  It makes a wonderfulvegetarian main dish, but also works well as a side to your favorite Mexicandishes!

Recipe Notes:*I found the flavor to be pleasantly spicy.  But if you don’t like spice, simply omit thecrushed red pepper flakes.*It took almost double the time in the recipe for my quinoato finally absorb all of the liquid, but I’m not sure why.  Any advice, quinoa experts?

Quinoa with Black BeansAdapted slightly from SkinnyMs.com
1 tbsp extra virgin olive oil1 small yellow onion, diced2 cloves garlic, minced¾ cup uncooked quinoa, rinsed1 (15 oz) can black beans,drained and rinsed1 tsp chili powder1 tsp cumin¼ tsp crushed red pepperflakes, or to tasteDash of sea salt1 (10 oz) can diced tomatoeswith green chilis, mild½ cup cilantro, chopped1 ¾ low sodium vegetable broth

Heat the oil in a largeskillet over medium heat.  Add the onionsand sauté until tender, about 5 minutes. Add the garlic and cook until fragrant, about 1 minute.
Add all of the remainingingredients and stir to mix.  Cover andbring the pot to a boil.  Reduce the heatto low and simmer for 15-20 minutes or until the liquid is absorbed (see recipenote.) Remove from heat and allow to sit, still covered, for 5 minutes beforeserving.  Fluff the quinoa with afork.  Serve topped with avocado chunksand a sprinkle of feta, if desired.
Serves 3-4

Piña Colada Cupcakes

Since I started makingtropical drink inspired cakes and cupcakes, my mom has been asking for me tomake piña colada cupcakes.  So when wewent for a visit recently, I brought along these cupcakes.
At first I wasn’t overlythrilled about these cupcakes, since I have no love of coconut and prefer toavoid it.  But the coconut flavor was sobeautifully subtle in these cupcakes (and in the frosting) that even I enjoyeda few! 
That said, these are a realcrowd pleaser, especially if you are serving these to guests that aren’t hugeon coconut.  But if you are a coconutlover, I recommend adding a teaspoon of coconut extract to the cake batter andfrosting and/or adding some shredded coconut to the cake batter.

Recipe Notes:*I used 1 (20 oz) can of crushed pineapple, drained with thejuice reserved for the pineapple and juice in the recipe.  I had both pineapple and juice leftover,which I froze for a later use

Cupcakes1 box yellow cake mix1 (4ish oz) box vanillainstant pudding4 eggs¾ cup unsweetened coconut milk½ cup canola oil¼ cup rum¼ cup reserved pineapple juice(see recipe note)1 tsp vanilla extract¾ cup crushed pineapple (seerecipe note)


Coconut Buttercream1 cup Crisco vegetableshortening4 cups powdered guar (about 1lb)5-6 tbsp unsweetened coconutmilk1 tbsp meringue powder1 tsp clear vanilla extractDash of salt

Preheat the oven to 350degrees F and line two muffin tins with paper liners.
In the bowl of a stand mixer,combine the cake mix, instant pudding, eggs, coconut milk, canola oil, rum,pineapple juice, and vanilla.  Beat onmedium speed for 2 minutes, or until smooth and combined.  Fold in the crushed pineapple.  Fill each liner about ¾ full of batter.  Bake in the preheated oven for 18-22 minutesor until a toothpick inserted into the center of a cupcake comes outclean.  Remove the cupcakes from the tinsand cool completely.
Meanwhile, make the coconutbuttercream by combining all of the ingredients into the bowl of a standmixer.  Mix on low for 1 minute, or untilcombined.  Then turn to medium speed andmix for another 1-2 minutes or until smooth and light, adding coconut milk asnecessary to achieve the desired consistency. Pipe the frosting onto the cooled cupcakes and garnish with dried pineapple flowers.
Makes 28 cupcakes

What would I do if it had been me with a brand new yard?  I’d gut what we have now, there’s nothing just a yard full of half dead weeds, dirt, and little patches of grass.  Then, I’d put a lemon tree in the corner, my herb garden next to the patio outside my bedroom window, and extend the patio out to have a rounded section on one end for a lovely sitting area.  The yard itself would be gull of a large grass area and bordered by bright, gorgeous flowers.  I’d put some flowers in a few large pots around the sitting area too.  I’m fantasizing now. 

To make planning out all my flowers, I used the Garden Guru Tool to find my area and pick from a selection of bulbs for the time of year I want those bright colored lovelies to bloom.  I love the selections I was given.  This tool really makes getting your garden just right a breeze.

As you know, or at least I hope you know, the Top Chef Masters finale was this past Wednesday.  If you don't want a spoiler - stop reading now.  You've been warned.
You may remember my track record with Top Chef.  Well, lighting struck again and Chris Cosentino WON!!  All I could do is bounce up and down on the couch when announced the win!  Let's be honest, I was totally biased toward Chris when I first saw him walk into the Top Chef Masters kitchen.  {I was so confident, I wrote this post intro on Sunday. What?}
I think Chris is just such an amazing chef who really stays true to his food and helps diners/cooks reach outside their comfort zone with his love of Offal.  This win was so well deserved in my eyes.  I really am in awe of him.  Bucket List - eat at Incanto.  I'll keep you posted. 
But today, something simple.  This dish is easy to make and is beautiful to eat. Comfort on  a plate.  Thanks to Monica for the recipe.

One Year Ago: Banana Banana Bread
Chicken ImperialFrom M Double M
Ingredients:

4 boneless, skinless chicken breasts
4 ounces French baguette
1/3 cup grated Parmesan cheese
5 tablespoons unsalted butter (3 tablespoons, room temp and 2 tablespoons melted)
3 tablespoons fresh parsley, minced  (or 1 teaspoon dried parsley), plus more for garnish
2 cloves garlic, minced  (I used 1 teaspoon crushed garlic)
1 shallot, minced
1/2 teaspoon black pepper
2 teaspoons fresh thyme, minced (or 1/2 teaspoon dried thyme)
1 cup heavy cream
3/4 cup chicken broth
1/3 cup dry white wine  (I used a Sauv Blanc)
2 teaspoons Dijon mustard

Directions:



Sprinkle salt over chicken breasts.  Cover with place in fridge while preparing topping.Preheat oven to 425 degrees F.


Put bread, 3 tablespoons softened butter, 2 tablespoons parsley, garlic, shallot, thyme, and pepper in a food processor.  Pulse until fully combined.{Monica puts her shallot in the sauce. I wasn't paying attention and put it in the topping.  You can't go wrong either way.}


Topping!Mine was more paste like.  Monica's topping looked bready and fluffy.Either way the flavor rocks and that's what's important.


Whisk together cream, chicken broth, wine, and mustard.


Pat chicken dry and season with pepper.  Arrange chicken in an X (for 4 breasts, or side-by-side for 2 breasts) in a large skillet.  Brush the chicken with melted butter, then distribute the topping evenly between the chicken.  If you topping is more paste-like too, press i down some to cover the entire breast.
Carefully pour 3/4 of the cream mixture into the pan around the chicken.Bake 30 to 35 minutes, until topping ir golden brown and chicken is cooked through.


Just out of the oven.
Gently remove chicken from the pan; set aside and keep warm.Add the rest of the cream mixture to the pan and whisk.  Bring to a boil over medium-high heat.Be careful, the skillet handle will be HOT!Cook until thickened, about 5 minutes.  Remove from heat and season with remaining parsley, salt and pepper.


Serve chicken over mashed potatoes, top with plenty of sauce, and a little sprinkling of parsley.

This dish is simply divine.  It has great flavor layers and a happy comfort food feeling.And if you're not already a follower on Monica's blog M Double M, I highly recommend it!

Italian Breakfast Skillet: Pork, it's whats for breakfast!

Hearty, comforting, home cooked breakfast.  That is what I want right now.  There is nothing quite like home cooked comfort food for breakfast and this skillet is exactly that.
Loaded with some of my favorite comfort foods; potatoes, sausage and bacon with Italian flair.

There is just something about comfort food that is kind of like a big food hug.  It makes you feel all warm and fuzzy inside.  A warm Italian style pork skillet is just what you have been waiting for.  Serve with a sprinkle of Italian style cheese blend to add more depth of flavor with Asiago, Romano, Mozzarella and Parmesan cheeses.  Then top with a dusting of fresh basil and an egg over easy (or scrambled eggs if your tastes prefer).

Italian Breakfast Skillet
serves 8

12 ounce bacon, chopped
1 pound package regular breakfast sausage, chopped
2 tablespoons extra virgin olive oil
1 pound of red potatoes, diced
1 teaspoon kosher salt, to taste
½ teaspoon fresh ground black pepper, to taste
1 teaspoon garlic powder
½ teaspoon onion powder
2 tablespoons tomato paste
2 tablespoons fresh chopped basil
8 eggs over easy (one per person)
Italian cheese blend
Basil for garnish

In a large skillet over medium high heat, cook bacon until almost crisp.  Remove from pan using a slotted spoon and set aside.

Add sausage to pan and cook until almost cooked through.  Remove from pan using a slotted spoon and set aside.

Add oil to pan and then add potatoes, salt, pepper, garlic and onion.  Stir to combine and cover, stirring occasionally until potatoes are cooked through.

Return bacon and sausage to pan.  Add tomato paste, basil, additional salt and pepper to taste.  Stir to combine and allow to cook until tomato paste is distributed over the entire skillet.  Add ¼ cup of water if needed to distribute the sauce over the entire skillet.

Serve and enjoy.  Serve skillet with an egg over easy, a sprinkle of Italian cheese blend and a sprinkle of fresh basil.
